Aunt Karla's Irish Soda Bread

·       4 cups (16 oz.) all purpose flour
·       1 tsp. baking soda
·       1 tsp. salt
·       14 oz. buttermilk


Karla taught me how to make this last time we were in UT. So delicious!  

Preheat oven to 425°. Lightly grease and flour a round cake pan. Sieve dry ingredients and combine in a large mixing bowl. Add the buttermilk and stir until just combined to form a sticky dough. Place on floured surface and lightly knead (not too much as over-kneading allows gas to escape). Shape into a round, relatively flat shape and cut an X in the top of the dough. Cover the pan with another pan of the same shape and size so the rims are together. Bake for 30 minutes (this simulates a “bastible pot”). Remover cover and bake for an additional 15 minutes. The bottom of the loaf will have a hollow sound when tapped when it’s done. Cover the bread in a tea towel and sprinkle with water to keep it lightly moistened. Delicious toasted with butter and/or honey!
