Breakfast Quiche

Ingredients: 
  • 9 eggs
  • 12 oz. ricotta cheese
  • 1 head broccoli, chopped into small bits
  • Ham, diced
  • Sharp cheddar cheese, shredded 
  • Salt & pepper

Note: This recipe is customizable—add a bit of this and a bit of that! And you can do however much cheese/ham/whatever else you like. The ricotta and eggs are the key ingredients here—they make the quiche super creamy!

Preheat oven to 350°. Beat eggs, adding salt and pepper to season, then add ricotta and mix until smooth. Pour into a greased 9-inch pie pan. Meanwhile, steam the broccoli until bright green and tender. Once cooked, add broccoli, ham, and any other toppings and gently stir into the eggs. Sprinkle the top with shredded cheese. Bake approx. 30-40 min. until quiche is firm in the middle and cheese turns golden brown.
