Yogurt Pancakes with Blueberry Compote

Pancakes:


·       1 ½ cup flour
·       1 tsp. baking powder
·       ½ tsp. baking soda
·       ½ tsp. salt
·       1 tbsp. sugar or honey
·       1 egg
·       1 cup plain yogurt
·       ¼ cup vegetable oil
·       ¼ cup water or milk



Compote:


·       2 cups frozen blueberries
·       3 tbsp. water
·       ¼ cup sugar
·       2 tsp. lemon juice



Pancakes: Combine dry ingredients. Beat egg and yogurt together (and add honey if you’re using instead of sugar); mix in oil and water or milk. Stir dry and wet ingredients together. Cook on buttered griddle.


Compote: Combine 1 cup blueberries, water, sugar and lemon juice in a small saucepan. Cook over a medium heat approx. 10 min. Add remaining blueberries and cook 8 min., stirring frequently. Serve warm over pancakes. (We like to spread a little cream cheese onto the pancake before adding the compote.)
