Catherine's Green Salad

Serves 4-6



·       1 small head romaine lettuce, chopped
·       1/8 red onion, sliced
·       ½ cucumber, diced
·       10-15 grape or cherry tomatoes, halved
·       6-8 strawberries, diced
·       Handful fresh raspberries
·       Handful grapes, halved
·       1 avocado, diced
·       ½-¾ cup feta cheese
·       Balsamic vinegar
·       Rice vinegar
·       Olive oil
·       Kosher salt
·       Fresh ground black pepper




Add all fresh ingredients to large bowl (except raspberries and feta) and toss to combine well. For dressing, add a liberal amount of olive oil, balsamic vinegar, rice vinegar, and several shakes of kosher salt and black pepper. Toss to combine and modify to taste. Top with raspberries and feta and toss before serving (so they don’t all fall apart—plus it looks pretty!) You don’t have to add all the berries/grapes every time, but it definitely tastes best with all ingredients included!

We also add slice grilled chicken to make it more of a meal.
