Makes 8 naan breads
- · 1 tsp. sugar
- · ½ cup warm water
- · ¼ oz. active dry yeast
- · 2 ¼ cups all-purpose flour
- · ½ cup plain Greek yogurt
- · 1 tbsp. olive oil
- · 1 clove minced garlic
- · ½ tsp. coriander powder
In small mixing bowl, add
sugar, warm water, and yeast, stirring to combine. Allow to sit for 10 min.,
then mix in yogurt, olive oil, garlic, and coriander. In separate mixing bowl,
add flour and make a well in which you will add the wet mixture. Knead until a
smooth dough forms. Form into a ball and allow to sit, covered in a warm spot,
until double in size, about 1 hour. Divide into 8 equal portions and roll into
naan shapes.
Heat skillet (cast iron
preferred) over high heat with a little olive oil (go really gentle on this or
you will end up with soggy naan). Cook naans on skillet on each side until
dough begins to bubble and dark spots appear.
